Sushi Salad
2 cups cooked brown rice
1/4 c. Seasoned rice vinegar
1 cucumber, cut in 1/2" dice
8 radishes, sliced
1 cup thawed frozen peas
1 bunch green onions, sliced
1/2 lb. shrimp, cooked and peeled (save liquid for another recipe)
1/2 lb. crab surimi (fake crab legs or pieces)
or use 1 lb. of either seafood alone
1 T. Minced fresh ginger
1 t. Sesame seeds
1 lb. Fresh spinach, stems removed and torn in pieces
Combine all ingredients except spinach in a bowl. Serve on a bed of spinach
leaves.
Dressing or dipping sauce:
2 T. Soy sauce
2 T. Seasoned rice wine vinegar
1 t. Prepared wasabi, or to taste
To prepare wasabi: Put about 1 T. Of powdered wasabi in a small bowl and
mix in a small amount of water to make a paste. Let sit for at least 15 minutes
to develop the flavor before use.
